Interesting Fact: Did you know that parsnips, one of the vegetables in our dried mixed vegetables have been cultivated and eaten since Roman times? Known in the 17th century as ‘parsneps’ Nicholas Culpeper believed them to be a better means of nourishing the body as a food, rather than as a medicine, he considered them to be a vegetable that was ‘somewhat windy’, he also hinted at the then perceived aphrodisiac properties of the parsnip saying that ‘they are thought to be provokers to venery’, venery being an old term for the pursuit of sexual pleasure. In the 16th century they were known as ‘Mypes’ and a type of marmalade was regular made from them, being mixed with a small quantity of sugar and used as a restorative food for invalids. Due to their natural sweetness, parsnips were used to make jam during WWII.

Ingredients: Dried and chopped pieces of carrot, parsnip, leek, onion, celery leaf, tomato and celery root.

They make an ideal ingredient to take on camping trips alongside other dried vegetables, a selection added to stock and noodles can give you an almost instant vegetable soup, they are easier to carry and require no preparation, ideal for cooking on the move.
