1 teaspoon Ground cinnamon
285g Oats
128g Sliced almonds
1/2 teaspoon Salt
85g Dried cranberries
Pecans

1 tablespoon Coconut sugar
1/2 Orange
4 Large apples cored and scored around the circumference
20g Butter

Instructions

Granola

Add the sugar, syrup, oil, vanilla and cinnamon to a saucepan over a low heat until the sugar is dissolved while stirring occasionally.

Mix the oats, pearl barley, nuts, seeds, cranberries and salt together in a separate bowl. Once the sugar mixture is dissolved, slowly pour it over the oat mixture stirring until coated. Bake in the oven at 180C for 20 minutes, rotate and bake for a further 20 minutes or until golden brown. Leave to cool.

Baked Apples

Heat the oven to 200C or 180C for fan assisted ovens, mix extra cinnamon, sugar and orange zest and juice into the granola. Place the apples on a baking tray, spoon the granola mixture into the holes and bake for 30 minutes until soft and sticky.
