Ingredients

Wings

240ml Almond milk
2 teaspoons Hot sauce
95g White rice flour
65g Cornstarch
1 teaspoon Salt
385g Panko breadcrumbs
680g Broccoli cut into bite-sized pieces

Sauce

2 tablespoons Coconut oil
2 tablespoons Vegetable oil
6 Garlic cloves minced
128g Hot sauce
1 teaspoon Hot paprika
3 tablespoons Tomato sauce/ketchup
1 teaspoon Cornstarch
3 teaspoons Water

Instructions

Wings

Preheat the oven to 220C and lightly grease a baking tray.

In a bowl, combine the milk, hot sauce, flour, cornstarch and salt until smooth. Add water if a thicker consistency is desired (enough to coat a piece of broccoli).

In a separate bowl, combine the breadcrumbs with salt and pepper to taste. Use one hand to dip a piece of broccoli into the batter, gently shake off then drop into the bowl of breadcrumbs. Use your other hand to coat it in breadcrumbs and transfer onto the prepared baking tray. Repeat.

Bake for 10 minutes, gently flip over each piece and bake for another 5 - 7 minutes of until nicely browned.

Sauce

Heat the coconut and vegetable oil in a saucepan over a medium-low heat. Once warm, add the garlic and cook, stirring frequently for 2 - 3 minutes or until softened. Add the hot sauce, paprika and ketchup and stir to combine. Simmer and stir for another 4 - 6 minutes to thicken.

In a small bowl, combine the cornstarch and water, stir the mixture into the sauce mixture continuing to cook until slightly thickened and glossy. Remove from the heat and serve with broccoli wings!
