4 Garlic cloves minced
100g Broccoli chopped
100g Carrots chopped
100g Bell peppers chopped
84g Onion peeled and chopped
3 tablespoons Thai yellow curry paste
1/4 teaspoon Ground fenugreek
2 teaspoon Curry powder
Salt to taste
Pepper to taste
800g Coconut milk
240ml Vegetable broth
180g Rice noodles


In a large pot heat some of the vegetable broth. Add the minced garlic and fry for around 3 minutes.

Add the broccoli, carrots, bell peppers and onion and fry for 2 minutes.

Mix in the curry paste, fenugreek and curry powder and season with salt and pepper. Pour in the coconut milk and vegetable broths followed by the rice noodles. Cook for 8 more minutes and serve!
