Ingredients

Biscuits

225g Unsalted butter
200g Caster sugar
2 teaspoons Salt
2 Eggs
250g All-purpose flour
150g Dark cacao powder
1/2 teaspoon Baking soda

Filling

115g Vegan butter
240g Icing sugar
1 teaspoon Vanilla extract

Instructions

Biscuit

Cream together the butter, sugar and salt in a mixing bowl until light and fluffy. Bet in the eggs.

In a separate bowl, sieve the flour, cacao and baking soda together. Add the dry ingredients to the wet and mix until a dough forms.

Turn the dough our onto a clean work surface and push the dough together into a flat square. Wrap cling film around the dough and place in the fridge for one hour.

Preheat the oven to 160C and line a baking tray with baking paper. Divide the dough into 4 pieces and place 3 in the fridge. Roll out the dough between two pieces of baking paper until 1/2cm thick.

Use a small cookie cutter to cut the dough into circular pieces and pop on the prepared baking tray. Repeat this process with the remaining dough in the fridge. Bake for 15 minutes then leave to cool.

Filling

In a clean bowl, combine the butter, icing sugar, vanilla and enough turmeric (or food colouring) to turn the mixture orange.

Assemble the cookies by spreading the filling onto a cookie and sandwiching it with another. Gently squeeze and enjoy!
