Is it really autumn if you don't cook with a pumpkin or two?!


1kg Pumpkin slices
2 tablespoons Olive oil
A pinch of Crushed chillies
6 Garlic cloves
1 Onion
2 teaspoons Thyme


Preheat the oven to 200C or 180C for fan assisted ovens. Place the pumpkin wedges on to a baking tray, drizzle with olive oil and sprinkle crushed chillies on top.

Place the garlic cloves and onion between the pumpkin wedges, season with thyme, salt and pepper.

Place in the oven for 25 to 30 minutes or until tender.
