Prepare the pie crust by rolling it out onto a clean work surface dusted with flour and lining a pie dish with the pastry and cutting to shape. Place in the fridge.
In a large mixing bowl combine the apples, lemon, flour, spices, sugar and vanilla together and preheat the oven to 200C. Spoon the filling into the prepared pie crust, scatter bits of butter on top of the filling.
Rub the butter into the flour to make a light breadcrumb texture, add the sugar and combine then sprinkle on top of the pie. Place in the oven for 20 minutes, reduce the temperature to 190C and bake for a further 30 minutes (20 minutes in you may want to carefully cover with foil to prevent the edges from burning).
Leave to cool before serving. Serve with star anise for decoration!
