6 Large Tomatoes
112g Spinach
100g Mozzarella shredded
100g Parmesan cheese
Olive oil
Salt to taste
Pepper to taste


Preheat the oven to 200C and line a baking tray with baking paper.

Cut the top off the tomatoes, scoop out the insides and place in to a bowl.

Add the cheese to the bowl a long with spinach and combine.

Stuff each tomato with the cheese mixture, drizzle olive oil on top and sprinkle with chives and chilli powder if desired.

Place the tops of the tomatoes on top and bake for 8 to 10 minutes or until the cheese is melted.

Serve with salt and pepper to taste.
