Description: Tamarind comes from an evergreen, bushy tree, native to Asia and Northern Africa which grows to a height of 12-30 metres. The leaves are bright gren in colour, alternate, long and feathery and comprised of 10-20 pairs of fine-cut leaflets 5-6mm in length, giving an overall feathery look the entire leaf is 7.5-15cm in length. The 5-petaled, elongated flowers are unassuming and yellowy-orange in colour with red streaks, approximately 2.5cm in diameter. The fruits look like a pod and are elongated approximnately 12-15 cm in length, with a hard, brown shell; inside the shell the pod holds fleshy, juicy, acidulous pulp.

Brief History: Did you know that the word ‘tamarind’ comes from an Arab expression meaning 'date of India'? The tree has been cultivated since about 400 B.C. and there are numerous references to tamarind in ancient Tamil and Ayurvedic literature, including the Vagbhata's Astangahrdaya, which mention tamarind being used as an ancient remedy for constipation, the tree was mentioned by Marco Polo in late 13th century as a means of inducing vomiting.

Ingredients: Tamarind concentrate made from the pericarp of Tamarindus indica.
