For those cold winter evenings, tuck into the ultimate comfort food dish!


300g Sweet potatoes peeled and chopped into cubes
1 tbsp Olive oil
1 Onion chopped
1 Red bell pepper diced
1 tbsp Ground cumin
A pinch of Crushed chillies
400g Chopped tomatoes
3 tbsp White wine vinegar
1 Vegetable stock cube made up to 450ml
100g Frozen peas


Drizzle the olive oil into a casserole dish and heat. Add the onion and sauté for 2 to 3 minutes, stir in the sweet potato, pepper, cumin, coriander and chilli and sauté for 3 - 4 minutes.

Add the kidney beans, black-eyed beans, tomatoes, vinegar, vegetable stock and frozen peas and simmer for 20 to 30 minutes.
