128g Quinoa
235ml Water
1 Red cabbage Chopped
A handful of Cress
1 Red bell pepper diced
1 Cucumber diced
1 Carrot diced


60ml Lemon juice
60ml Apple cider vinegar
2 tablespoons Agave syrup
1/2 teaspoon Black pepper
1/2 teaspoon Dried oregano
1/2 teaspoon Dried parsley
1/2 teaspoon Allspice
1/2 teaspoon Dried basil
1/2 teaspoon Cumin
1 Cabbage


Place the quinoa and water in a saucepan over a low heat for 12 minutes. Meanwhile, cook the rice according to the pack.


Combine the dressing ingredients in a large bowl, toss in the quinoa, rice, red cabbage, cress, bell peppers, cucumber and carrot.

Spoon the mixture into large cabbage leaves and enjoy!
